If you need something truly unique and special to pair with that Christmas turkey, look no further. Sparkling red is back and on this week’s English Wine blog Bolney tells us more about theirs (and all their other mouth-watering wines). Over to the team at Bolney.

Bolney Wine Estate is located on the edge of the South Downs, around 14 miles from the UK’s south coast. Our sandstone soils and south-facing slopes provide the perfect conditions for vine-growing and like many English vineyards, we started out making white wines, and still produce excellent whites from familiar grapes. However, the climate in southern England has become warmer, making it possible to grow red grapes successfully here. As result, we now specialise in premium-quality red wines, notably Pinot Noir, and also make some wonderful rosé.

How would you describe your sparkling wines?
Blanc de Blancs – 100% Chardonnay
A stylish vintage, traditional method, quality sparkling wine. Lots of yellow fruit character, floral notes, and wonderful yeasty undertones. Smooth texture with a fine mousse. Gentle fruit and lovely length. Great as an aperitif or paired with shellfish, seafood, poultry, pork and strong cheeses.
Cuvee Rose – 100% Pinot Noir
A superb vintage, traditional method, quality sparkling wine. A fine mousse, tightly beaded. On the nose a touch of yeast, notes of raspberry and dry strawberry, with subtle savoury undertones adding complexity. Ideal with hors d‘oeuvres and starters, great with fish, cheese and some red berry desserts.
Bolney Bubbly – 70% Muller-Thurgau, 20% Reichensteiner, 10% Chardonnay
Delightful floral and brioche notes combine with zesty citrus fruit, honeysuckle and elderflower, finishing with just a hint of sweetness. Great aperitif, pair also with fish – especially oily fish – dishes such as seared tuna, salmon en croute & smoked mackerel pâté. Also great with chicken risotto.
Cuvee Noir – 100% Dornfelder
A unique vintage, traditional method, quality red sparkling wine. Aromas reminiscent of red stone fruits – especially red cherry – redcurrants and sweet blueberries. On the palate, a wonderful creamy richness and full-bodied mousse, packed full of ripe summer fruits, with a hint of sweet spice on the finish. Versatile with food: pair with rich, gamey dishes, cheese, and even bitter chocolate desserts.

How would you describe your red wines?
Pinot Noir: A super-premium, cool-climate Pinot. Light to medium body, full of red cherry and hints of cedar wood, which gives a lovely complexity to the bouquet and palate.
Lychgate Red: A medium-bodied dry red wine with lovely black fruit aromas and complementary oak notes. The palate shows ripe blackcurrant and red berry flavours held together with good tannic structure.

What food are they best paired with?
Chicken, rabbit, game birds, pork and duck.

How would you describe your white wines?
Pinot Gris: A super-premium dry white wine with fragrant aromas of rose, jasmine and conference pear. The palate is wonderfully rich and creamy with a slightly honeyed character.
Bacchus: Often referred to as England’s Sauvignon Blanc, this is a fragrant wine with aromas of ripe green apple and gooseberry, blending perfectly with vibrant, fresh fruit flavours on the palate and a hint of spice on the finish.
Lychgate White: Rich, ripe aromas of lychee and passion fruit, off-dry, with sweetness balanced by a crisp acidity, with lingering hints of elderflower on the finish.

What food are they best paired with?
Pinot Gris: Excellent with sushi, shellfish and most fish dishes and some more delicate Asian dishes.
Bacchus: Delicious with white meat, pork, summer salads and BBQ dishes.
Lychgate White: Pair with Asian dishes, blue cheese with walnut and pear, or even fresh-fruited desserts.
